Vegan Good Green Vitality Swirl Cheesecake recipe

Nuzest Good Green Vitality is usually enjoyed as a drink or blended into a smoothie. But did you know you can also use it in a no-bake cheesecake?

This Vegan Good Green Vitality Swirl Cheesecake recipe was created by @charissa_and_co_wellness and combines a creamy cashew filling with coconut, lemon, vanilla and a swirl of Nuzest Good Green Vitality. The crust is made with Medjool dates and walnuts, so no oven is needed.

Vegan, dairy-free and gluten-free
Time: approximately 4 hours and 30 minutes, excluding soaking time
Serves: 10 slices

Ingredients

For the filling

1 ½ cups cashews, soaked overnight
½ cup maple syrup
¼ cup coconut milk
¼ cup coconut yoghurt
¼ scant cup melted coconut oil
Juice of 1 medium lemon
1 tsp vanilla extract
1 serve Nuzest Good Green Vitality
¼ tsp sea salt

For the crust

1 cup packed Medjool dates, pitted
1 ½ cups raw walnuts
Pinch of sea salt

Method

Soak the cashews in cool water for 6 to 8 hours, or overnight. Drain well and set aside.

Add the dates to a high-powered food processor and blend until small bits remain and the mixture forms a ball. Remove and set aside.

Add the walnuts and sea salt to the food processor and blitz until a meal-like texture forms. Add the date mixture and blitz again until a loose dough forms. If the consistency needs adjusting, add a few more dates or a few more walnuts.

Line a standard pie or cake dish, around 7 inches, with baking paper. Add the crust mixture and carefully press it down with your fingers.

To flatten it further, line a flat-edged drinking glass with baking paper and press down, pushing the crust slightly up the sides. Place in the freezer to firm.

Add all filling ingredients except Good Green Vitality to a high-speed blender or food processor and blend until creamy and smooth. Add more coconut milk if needed.

Taste for flavour and sweetness. Add more maple syrup for sweetness, more vanilla if needed, or more coconut yoghurt or lemon for extra tanginess.

Pour two thirds of the filling into the crust and tap the pan a few times to release any air bubbles. Set aside.

Add Good Green Vitality to the remaining filling and blend until creamy and smooth. Add it to the filling in a swirling motion, then swirl a few times with a chopstick to create a marbled pattern. Tap again to release air bubbles.

Cover carefully and loosely with cling wrap and freeze for 4 hours, or until set. Check that the filling is firm.

To serve, remove from the freezer and let sit for 10 minutes. Slice with a hot knife.

Store in an airtight container in the freezer for up to one month.
